Bang Bang Cauliflower

Having worked in a restaurant as a maker of hot wings, it is hard for me to resist anything that is crispy and coated with hot sauce. When Olives for Dinner posted her version of Bang Bang Cauliflower, I knew it would make an appearance on my dinner table sooner rather than later. Yup, it was super yummy! Even the teenager loved it!

While I prefer a runnier sauce, similar to a hot wing sauce, this is made with mayo, so it there is more of a creamy coating on the cauliflower. Next time I will try it with less mayo, always fun to experiment.

Bang Bang Cauliflower (adapted from Olives for Dinner)
(serves 2-3)

1 small head cauliflower, broken into small florets
2 eggs
1/2 cup flour
1 1/2 cups breadcrumbs (or panko if you have it)
salt
1 cup mayo
juice from 1 lime
1 1/2 tablespoons sriracha
oil spray
cilantro for garnish

Preheat oven to 400 degrees. Bread cauliflower florets by rolling in flour, dipping in egg and then coating in breadcrumbs. Repeat for all florets. Spray with oil and bake for 15 minutes; turn each floret and bake another 10 minutes. Meanwhile mix mayo, lime and sriracha to make runny sauce. Once florets are done, allow to cool for 2-3 minutes and toss with sauce, leaving some sauce aside for dipping. Serve with cilantro and extra sriracha.
